Curried Chickpea Salad

INGREDIENTS
Mashed Chickpea Ingredients:
- 1 540 mL can Chickpeas
- 1 tbsp. OLiV White Balsamic Vinegar
- 1 tbsp. OLiV Curry Extra Virgin Olive Oil (EVOO)
- 1/4 cup Mayo (can substitute for vegan mayo, greek yogurt or tahini)
- 1 tsp. Dijon Mustard
- 1 tbsp. Garlic Powder
- 1 tbsp. Ground Turmeric
- 1/2 Lemon, juiced
- Salt & pepper, to taste
Chickpea Salad Ingredients:
- 1/4 cup Green Onions, chopped
- 1/4 cup Grapes, chopped (can substitute for dried cranberries or raisins)
- 1/4 cup Celery, finely chopped
- 1/4 cup Broccoli, finely chopped
- 1/4 cup Carrots, grated
Pita Ingredients:
- Pita pockets
- Optional: Spinach or Lettuce
DIRECTIONS
- Combine all mashed chickpea ingredients and mash chickpeas to your liking using a fork or a pestle.
- Add remaining chickpea salad ingredients and toss until well combined.
- Cut an opening in a pita pocket and add fresh spinach or lettuce.
- Top with chickpea salad filling. Enjoy!
