Chipotle Lime Corn Salsa
INGREDIENTS
- 3 cups Corn, you can also use raw, canned or frozen
- 1 cup Cherry Tomatoes, chopped
- 1/2 Jalapeno, diced
- 1/2 Lime, juiced
- 1/2 cup Cilantro, finely chopped
- 1/2 Onion, finely chopped
- 1-2 cloves Garlic, finely chopped
- 1 Avocado, diced

Drizzle OLiV Chipotle Extra Virgin Olive Oil (EVOO)
- Drizzle OLiV Lime White Balsamic Vinegar
- Salt & Pepper, to taste
DIRECTIONS
- In a medium serving bowl, combine all of the ingredients and mix well.
- Serve with chips, in tacos or on top of grilled salmon!
