Caprese Orzo Salad

INGREDIENTS
- 2 cup Orzo Pasta
- 1/4 cup OLiV Bergamot Lemon Balsamic Vinegar
- 1/4 cup OLiV Pesto Extra Virgin Olive Oil (EVOO)
- 2 Garlic clove, minced
- 1 cup fresh Mozzarella (we used pearls)
- 1 1/2 cup Cherry Tomatoes, halved
- 1/4 cup Red Onion, diced
- 1/2 cup fresh Basil, chopped
- Salt & pepper, to taste
DIRECTIONS

Cook orzo according to package directions. Drain and set aside to cool.
- Once orzo has cooled, add the remaining ingredients and toss until fully coated.
